Last year for a Halloween party I made a delicious
loaf of whole wheat vegan pumpkin bread which was a hit at the party, but it
was a pain for me to serve because I had to slice the loaf then slice the
slices again into squares. It took too much time for such a simple dish, so
this year I decided to make one of my quick bread recipes in a 9x13 in pan so
it would be easier to cut up quickly for a pot luck dish.
I made whole wheat banana bread with chocolate
chips. I decided to make the dish healthier than most things that you see on a
dessert table for the health conscious crowd. However, this bread is still nice
and sweet with the bananas and chocolate chips.

Ingredients
- ½ cup granulated sugar
- ½ cup light brown sugar
- ¾ cup buttermilk
- ½ cup applesauce
- 2 eggs
- 1 tsp vanilla extract
- 3 ripe bananas, mashed
- 1 ½ cups whole wheat flour
- ½ cup whole wheat pastry flour
- 1 tsp baking soda
- ¾ tsp salt
- ½ cup semi sweet chocolate chips
Directions
1. Preheat the oven to 375 degrees F and grease a 9 x 13 in glass pan.
2. Mix sugar, buttermilk, applesauce, eggs, and vanilla in a large bowl.
3. Mix in the bananas.
4. Slowly add the flour, baking soda, and salt. Mix well, but do not over mix. You just want to get all the ingredients wet.
5. Fold in the semi sweet chocolate chips.
6. Pour the batter in the greased pan.
7. Bake for 45-50 minutes or until the edges are golden brown and a toothpick inserted in the middle comes out clean.
8. Allow to cool 10 minutes before serving.
